When to cut wilted cymbidium stems?

When exactly can I cut off the stem? Must I wait for all the flowers to dry and fall off on their own and the stem to completely dry out before cutting it?

Or can I cut it now that they are...

Thanks everyone... So I shouldn't feel guilty? I mean I'm in Canada. My most expensive orchid was 50 dollars and this one is like 10 times bigger than it. :)

there is one nice big new root growing out....

yes you are correct i do have in fact 2 keiki's (baby plants) growing from the stems... i'm happy that it might just be aging and not disease of some sort.
