When to cut wilted cymbidium stems?
When exactly can I cut off the stem? Must I wait for all the flowers to dry and fall off on their own and the stem to completely dry out before cutting it?
Or can I cut it now that they are mostly dry and the stem is quite yellow?

Completely up to you. You can cut it off as soon as all the blooms wilt and fall off, or you can wait until the spike has dried up.

Cut it whenever you want. It won't hurt the plant to cut it earlier rather than later.
