I have done baby greens in nursery trays of sphagnum...

Moss about 1.5" deep, seeds nestled in the top, watered by pouring into the corner of the tray until it's 1/2" deep throughout. It wicks nicely and evaporates quickly.

When you harvested everything, dump it in the compost heap and start again.

super idea...did you add anything to the water for fert?
