Repotting and other questions...

I have two phalaenopsis, which I've had now for about a year. One is light pink, the other white. They were both grocery store purchases. I have several questions!
1) About 3 months ago, my sister knocked over my white plant. It lost a fair bit of potting medium, and the roots were disrupted. I added more and fixed this as best I could. It was flowering, and after this all the flowers fell off and it dropped two leaves. I thought it was going to die, but it hung on. It is now growing new leaves from the centre of the crown, and the two flower stems that were previously flowering died down several inches, but have now created new flower shoots out to the side that are budding. Is this ok for the plant?
2) It seems that the roots for both of these orchids are way exceeding the pot. There is still some potting medium left, but their roots are both way up on the surface. Is this ok? Do they need to be repotted? The pink one is currently in bloom, and the white one is budded.
3) When I bought the pink one, it was wrapped in plastic that was far too small for its wide leaves. It has a leaf that is deformed, I would imagine as a consequence to being wrapped that way. It's folded backwards on itself. It shows no signs of sickness, flowers regularly, and has new growth- just one folded leaf. Anything I can do about this?
4) I have been using schultz orchid food for their weekly waterings. Not as directed, but much weaker. Is this ok?
