I have a Nervilia Plicata(dormant) and its tuber(about 1-2cm across) has ridges on it.

First, Welcome!

I'm not familiar with the genus, but it is possible that it is getting a bit dehydrated. I'd suggest getting it potted up, and given a little moisture. (My only point of reference is with Habenaria, I have learned to give them a bit of water during dormancy, start watering a bit more around March or April when it's time to "wake up")
