I love fruit cake. My granny used to make one and Inever got the recipe. Shame on me. But on the other hand, I have LOVED Claxton fruit cakes (dark) forever.. They are more like a candy cake they are so packed with pecans and good fruit. A little goes a long way. This year I got busy and forgot. Went yesterday to find one or two and none to be found ;-( This will be the first year in many years no 'finger' fruit cake for the table.
Other home made fruit cakes aside from my grannys I haven't liked.
I agree... it depends. I voted for "I love it" because I'm thinking of all the really goods ones I've had.
For me they have to be moist enough. I've had some really nice cheap cakes (there used to be a good one which was sold as individual slices to put in your lunch box).
But if it is too dry then it is awful. Too many nuts and too much dry hard candied fruit is a bad thing. Plenty of saltana's, currents, rasins, cherries etc. all in a moist cake is heaven.
My DH's granny used to make one that was really good. I make it some years. It is full of pecans and candied cherries and butter. His granny was from the south, way south. Carol
If mine is enchanted or not, but I could eat that stuff until I was as big as a house. Anyone that has tasted it has had the same reaction. Even women who are in competitions have told me just how good it is to eat.
