Do you know how cold it gets in your cold room?
According to the Yamamoto website, these hybrids need at least about a month of night 58F or lower.
Lower the better, but not freezing.
I used to keep mine at between 10C-0 for both day and night. They bloomed like crazy!!!
Country Girl will need cooler conditions.
Also, bright light throughout the year is very important for good flower production.
It is also recommended that fertilizers be stopped in as early as summer time.
I only fertilized about twice a year in the past. Once after flowers drop and new shoots are active, and then once more in May or June. Less is more, I find.

Edit June 15 2020:
Yamamoto Dendrobiums in Japan hybridizes and produces a great number of these plants. Their Web site formerly had excellent growing information for hobbyists. Unfortunately it is no longer there. You can still look at the varieties they grow, and maybe see one very similar to yours.
I saved the page, and summarized it in a post in this thread:
Uncertain if Dendrobium is still alive
Yamamoto now has a page showing how to force Dendrobium nobile for Christmas flowering in Japan's climate. There is a lot to learn from that page, but it is intended for growers who can artificially heat and cool their greenhouses during off seasons. Note they use coconut husk for growing medium, which many orchidists would say retains too much water for orchids. For many orchids that is correct, but this is a very thirsty orchid.

It's between 8 and 12C for lowest at night, depending on the Weather.
I stop fertilizing in August and watering end of September
But give them a bit of water every 4 weeks or so.
I could try outside next year, but it does go to -4 some days
But wonder if its in a sheltered spot ,it might be okay.I will try next winter and see what happens .

No, don't risk damaging your plants by putting them outside where it goes below freezing.
8-12C is cool enough to flower any varieties.
Plus, your cultural description seem very good except I am concerned that you reduce watering too early.
As long as you keep the canes plump, all is well.
I'm surprised that most of the leaves are still on under 8-12 C. Mine used to shed all the leaves at around & under 10.
Now they shed either none or a couple lower leaves in the fall. I usually strip them all off. They get in the way and I can't see the few flowers I get. lol
Light???
Anyways, with 8-12C, it is natural that they won't flower but wait until the temperature warms up a little more.
Mine ( when I had them under 10C) would start showing buds late January into February, and then flowers opened in February into May.

I have them all sitting under 4 - 4' T5's -so they get plenty of light
and on mine it seems they only loose Leafs a year after they have bloomed --so far anyway
i guess -as always with Orchids---we wait some more to see blooms
and i think i stop watering end of October this year--see if it changes anything .

Forestview Gardens used to have it but not at the moment. They always seem to carry some nobile Dens so I bet they will get it again some time.
