Default blooming finished

One more question if I may. It is just finishing blooming. when it does can I just cut of the stalk? or is there something special I need to do?

If cutting of is OK can I cut as close to the where it comes out of the main plant? or?

You may cut it, or leave it to dry up, your choice. If it doesn't bother you, the plant will reabsorb the nutrients in it and when it's brown, you can take it off. Cut just above the leaves.
