Tiny flies in the pots is probably fungus gnats. Not a direct problem of the plants, but often a sign that repotting is needed, and they can accelerate decay of the media. With a small collection repotting can help keep them under control. I have no idea if a product called Gnatrol is available in Italy, but for a large collection you might want to look for it or investigate other controls.
It s very strange as I ve recently reported my orchids but the problem persists I don't know what to do I am afraid reporting could stress my plants as they ve started to create new roots Before reporting I used hyper oxide to clean the roots but it seems it didn't help The pots and the media I used were new I am afraid my plants suffer from fungus disease as the last time I reported them I noticed some white thing like snow in the roots

It just sounds like you need some fly spray like that gnat control mentioned above. A natural way could be to invest in some insect eating plants like sundew or venus fly traps. Once I put my plants outside the winds clear these little flies off. I seem only to get them the end of winter, as that may be their breeding season. I am not sure how they could accelerate the decomposition of media. I will have to study this.
I have found out a lot of people who work in offices here spray their soil of the plants at the office with flea and tick spray intended for dogs. This kills the fungus gnats.
The white material might be mealy bugs, scale or mold. A photo would help.

The new roots are healthy. They have green tips and they are white farther back. I don't see anything white like snow.
Some of the bark in the pot has a white deposit that may be minerals from your water. Orchids do better with very pure water. Can you collect rain water to use on the plant? Or buy reverse-osmosis purified water? It does not have to be drinking quality.
