Hi all, sad to say but the colder temperatures are starting to dawn upon us after a not so hot summer.. .where did that summer go???

anyhoo, my 2 dendrobiums are starting to get slightly yellow leaves here and there. I'm assuming this is their signal that they want their winter rest? They are noids that my mom got me (at a flower show none the less! You'd think they'd have tags! ) so I'm not sure what they are but i did post them up in the id section when i first got them and i believe the consensus is that they are nobile type dendrobiums and would require a winter rest. So no fertilizer and no water? Or just less water? I'm in Toronto. Would it be too early to start with the winter rest?
Here are the lovelies in bloom when i first got them...
