It does look like multiple plants, personally I would pot them separately not together when you re-pot,
Multiple plants need a bigger pot for the width of the clump together, but to get that you generally end up with a pot that is too deep as you have seen. With smaller pots and the plants separated the height to diameter should leave you with the roots going to the bottom.
Hollow and mushy roots are bad, firm roots are good (whatever the colour). You do get dried up crunchy Arial roots sometimes, not a problem if other roots are good.
