The last blossom dropped the other day so I just cut it back and there one in every node ! There's like 4 or 5

To my experience, it could be a spike!
I sometimes kept two nodes un-trimmed after the blossom, the next year the nodes will bring new spikes...but only happened to the white Phal.
Not every one worked, the old stem might dry out.


That's why it has so many stems...
