For species info, the Orchid Culture series by Margaret and Charles Baker is unparalleled in its scope and thoroughness. There's a book on Dendrobium, one on the Oncidium/Odontoglossum tribe, one for a bunch of 'P' genera (Phalaenopsis, Phragmipedium, Pleione, and others), and a multi-part one co-written with Guido Braem on Paphiopedilum. You can buy individual culture sheets for lots of other species/genera at Orchid Culture -- Charles and Margaret Baker, they'll even custom-generate them from available data if you're looking for something not on the list. I definitely concur with the recommendation of Understanding Orchids. Even though I've been growing orchids for more than 20 years, reading this book significantly increased my enthusiasm for them and resulted in my trying out many new species. The culture tips are excellent.

I like "Miniature orchids" from Steven A. Frowine, it has good culture sheets on quite a few orchids. The other books I know are in french, but if you want a preview of Understanding Orchids.
