Default Dendrobium Nobile Winter Rest w Keiki?

Hello everyone! I bought a dendrobium nobile from Trader Joe's and how that the flowers have gone, the dehydrated stalk is growing keikis. I know that I am not supposed to water them now for the winter rest but they are growing babies and so should i still continue to water them? Should I fertilize them?

Is it true that the reason why they produce keikis instead of flowers is because they did not get enough light and were overfertilized or were fertilized too long?

1st picture shows the keikis on a dehydrated stalk because I didn't know that I had to water it often during blooming. Should I abandon winter rest and keep watering?

2nd picture show nubs that started near the top of another stalk. I don't know if this will be keikis or buds. Should I keep watering?

3rd & 4th pictures show a nub at the bottom of the latest stalk that finished blooming. Should I keep watering through winter?

5th & 6th pictures are of a different plant altogether. It is a dendrobium burana pink lady x sripai. It is a plantlet that I got for free and it has fine roots. When I received it, that leaf was yellowing and now it has gotten worse. My question is, what do I do to fix this and should this plant get a winter rest too?

Yes, those might be buds.

Den nobiles don't need a dry winter rest to flower. Cool night temperatures, around 50-55 F / 10-12C trigger flowering. When actively growing shoots in spring/summer they should stay moist to wet. In fall and winter watering can be reduced, but they do better if they aren't dried to the point they drop leaves.

I would spray just the keiki roots frequently. Water the plant as soon as the medium is almost dry.
