Hi win_67. That site says water 2 to 3 times a week. But I must admit, it's not very specific about conditions. So I'll have to fail them on that one.

Watering schedule and amount will definitely depend on growing conditions - surrounding environment, growing media used, temperature, etc. For me, I use volcanic rock (scoria type) - so usually I can water every morning. I normally just use a spray wand to dump quite a bit of water into the media - leaving the leaves dry. I find it completely UNnecessary to aim the water spray nozzle toward the stem. Just aiming a couple of centimetre away from the stem (spraying into the media) is fine.

The phal in the attached photo isn't a philippinensis. It's a no i.d. one.

Could be a new root. Starting off purple coloured at first maybe, then changing to white with green tip later. Keep us updated.

I am not really going to make a guess but just say I don't think it is a root. Given the size of the "purple thing" is almost as big as the other root in the picture I would tend to think it would look more like a root than a purple thing. It also looks like the purple thing is growing around another root? Maybe a picture with more of the entire plant visible would help but I don't think root.

Keep us posted on what develops from that violet growth. That will be interesting to see what it is later.

Also - write 'stem' (not steam) ..... as steam is vapour that comes off the surface of heated water, or something like that

Still hard to say. If I was going to bet money on it I would put my money on a flower spike.
