You can't ask that!
It would be too easy to say Neofinetia falcata since leaf characteristics are part of the cult.
How about pendant leaves like Masdevallia caesia or long terete leaves of a Paraphalaenopis?

For something very different...go with a dendrochilum tenellum. Mine is pretty large now and even out of bloom...it always generates a lot of interest. In bloom...it's a stunner.
Easy grower...intermediate temps, bright light, likes a lot of water in active months and less in the winter. I water it nearly every day in the summer and about once a week in winter. It's grown well in med bark and was just up-potted to a larger plastic pot. It's been an exceptionally easy grower and reliable bloomer for years. Spring bloomer...just starting to spike now.
Edit- I just checked and it's more of a finer bark that I used. Not the smallest orchiata but the next size up. So, not a seedling size but not quite med size either.

Imbricate leaves like those found on plants of the genus Lockhartia and Dendrobium in Aporum section.

Psycopsis, many of the mottled leaf paphiopetalums like Bellatum. For pencil or rat tails like brassovola nodosa and crosses, Dockrilla Wassellii, Angraecum (mystacidium) distichum...

Looking at my collection beyond what has already been mentioned I think Stanhopea, Psychopsis Mendenhall 'Hildos', Restrepia brachypus and my Dracula vampira have very cool leaves.

I'm following this thread closely as this is an interest of mine, too. Out of necessity, my collection is and will have to remain small (both in number and plant size), which means I will have many months of the year with no flowers. Attractive foliage will somewhat make up for that, so I'm trying to get some ideas. And, of course, "best leaves" is all in the eye of the beholder, and I'm sure we all have varying ideas of what we like.
I'm especially attracted to mottled patterns, so I'm very happy with my new Paph. delenatii. Jewel orchids are also on my list, as jkofferdahl mentioned.
I'm looking up all of the suggestions here for more ideas!
