I was wondering what would be the best way to hang a Vanda... with the leaves pointing East/West or North/South?

The plant is going to grow in the general direction of where it gets the most sun, so keep that in mind

Your environment have high humidity in the atmosphere for Vandas to grow outdoors unless you get frost then you must bring it indoors.
A south facing light is ideal. But take note that the 11am to 3pm direct sun will burn the leaves unless you have gradually adapted it to direct sunlight. Mokaras love to be in direct sun also Vandas with terette leaves....otherwise to be safe, put it in a shaded bright light.

Well assume the Vanda's are under a shade cloth in direct sun. Would it be best to orient the vanda with leaves from E-W or N-S? I'm assuming that E-W would provide the most light for the Vanda? Isn't that the direction you're suppose to orient a greenhouse?
It can take a long time for Vanda's to reorient.

Chatbud, you are near the equator so you can orient your plants at any direction all day..... the angle of the sun near the equator at noon is directly above you all year round.

Whereas, we are in the temperate zone and the angle of the sun in winter is totally different to the angle of the sun in the summer ....after all the Earth is a sphere = it is not perfectly round....

*the south facing direction of Baton Rouge takes advantage of the sun's brightness all year round....

The sun appears to move along with the Earth's sphere on any given day(the sun rises on the east and sets on the west), but follows different circles at different times of the year: most northerly at the Summer solstice and most southerly at the Winter solstice(meaning, the sun's angle will never be direcdtly above us at noon). At the equinoxes, the sun's path follows the Earth's equator.
