As far as the moss mounds, yes all of my Neos are in these mounds. I am a fairly new grower of Neofinetia and I find every aspect of their culture fascinating. There is much to learn here on the forum, many old interesting threads.
Neofinetia are grown in bark, Leca and other media as well. Some like to grow them mounted and they grow quite well.
I was attracted to them for their form as well as their rich history so for me, this is the way I want to grow them. The moss mound has been a successful way to culture Neofinetia for years and it works for me. I have plenty of other orchids in bark or spagh or mounted. The Neos in their moss mounds in Neo pots sets them apart from all others.
