Well, I've found that the secret to nicely shaped mounding, especially with the larger plants and pots is the extra extra extra long sphagnum. I got mine from Orchids Ltd. It's the loose packed AAAAA new zealand sphag that he has for sale there.
Otherwise, I just use the methods that's already been touched on by the various instructions on Japanese style mounding. After making sure i have a nice big hole through the mound and getting the roots lightly covered with sphag, I'll just take individual strands, gently push one end in between the mound of sphag and the pot with a thin, stiff object (thicker plant tags work well), wrap it around the mound making sure to cover up uneven spots, and wedge the other end of the strand in the same way as the first.
I do try to make sure that I don't use too much moss or that I don't wrap the strands too tightly. I like my moss balls to dry out in about 3 days
As for the pots--I got them all on ebay...username, greeny-pottery--nice korean guy based in london who used to make his own pots. I think I bought all but the last of standard height neo pots that he made himself--and if I'm not mistaken, Kelo here bought the last one for his manjushage, haha.
He does stock a small selection of very well made korean pots made by the renowned korean potter that goes by Haji, 河志 (tho at this point I think it's a studio or guild making them under his name). He just put up a few nice gold and black ones on the greeny-pottery ebay storefront.
I'd love to get some really nice pots, maybe some of the pierced ones that they have in japan and some of the nicer korean sanggam (inlay--see my amami hiroba and sobiryu) pots, but at the moment, the only way to get these seems to be to go to korea or japan....
