I just repotted it 2 days ago, should I pull it out again? There are not enough roots for any to show above the medium.

No, don't unpot it. Let it do its thing. If the roots were in poor condition, the repot should inspire some new ones. I wouldn't expect roots as thick as what you'd get on a Phal. Once these get going, you should have some nice ones to look at.
