I think whatever moth pollinates this plant is a crepuscular species, not a night-flying species. The flowers are powerfully fragrant in the early evening and early morning, but not at all in the middle of the night.
On my plant, anyway, the fragrance is present from about 5am to 10am, tapering off sharply after 8am. Then it's strongly fragrant again from 5pm to 9pm.
The flowers have been open for 11 days now, and I think the fragrance has gotten stronger every day. When it's putting out its scent it fills my whole kitchen/dining room and I can smell it as soon as I walk in the door. I love this plant.
