Water plant fertiliser (for aquariums) lacks a lot of things - mainly nitrates and phosphates. You'll probably need a complete hydroponic fertiliser that includes these along with all the trace elements.
It seems there could be a few different materials that can be used. In one of the video the material looks alot like washable furnace filter material. It seems like it won't hold moisture for any extended amount of time (like a sponge would).

It's doesn't absorb moisture, but does hold droplets within the web.
The substrate has to allow air to pass through it for the sake of the plants and for the sake of allowing the purification of the air.
I just add a small amount of normal fertilizer to the tank on my little wall.
After being absolutely amazed at the wall, my second thought was: How do you maintain something that big. Because those plants will need more than just water and fertilizer. It will be interesting to see this installation in another couple of years.
