I have done outdoor projects using waterproofed plywood (a climbing wall) that has withstood a decade of English rain, but I can see from Jmbaum's point about condensation that the indoor situation will be different!

These are all very good points... thank you so much for your advice. I think from what you've said this is not going to work indoors, though as I still would like to have a wall covered in greenery I'll likely just create a wall of plants which I know are happy indoors... the moss dream will remain to be realised another day!
(however, I will definitely be coating terracotta pots with the moss I have collected... thank you for that tip!)

I've always wanted to do a living plant wall. Although not practical for me, and beyond my budget constraints, this link has always impressed me (Tillandsia Wall). I am unable to translate, but the pictures (especially clicking on the small pictures that are under the 'Tillandsia Wall' header) are truly inspirational.

These are plenty of options for vertical gardens sans bryophytes…

I’d recommend peperomias.
