It should, but the amount of red depends on growing conditions, and my understanding is that it can come out pure white at one of the extremes.

It's one thing I want to try and get right with mine. It had a red spot on each flower when bought and after I've worked out how to flower it at all I want to try and get conditions right to ensure I get red spots each time. Unfortunately can't remember what I read about the conditions required for that though

mm, I'm not totally sure about it Rosie. Yes, flowers could go from total white to total red, but they "should" show, more or less, all different gradient.
Colder temps bring to much vivid color because some subastances in the flowers get more concentrated.

This is possible. My plant that was recently posted had your typical red spotting. See here:
speciosa C1
Blooming again now with warmer weather, it looks exactly like Orchideyas with only color on the lip.

Cooler temps will bring out more red on speciosa blooms, how much depends on the individual plant.
