Why only one or two flowers on phal spike?
Default

Phal is considered a "low" light orchid. Yet, they require fairly bright light to flower well. No direct sun, but very bright light will ensure high flower count.

Lower light, lower flower count.

I have typical large flowering phal and I have average of 8, 9 flowers, so that's not too bad I guess.

Also, this has already been mentioned by Camille, but the pictures you posted, except for the white one, tend to have one or two flowers open at a time, but they continue on flowering for a long long time.
