Timing will vary wildly depending on growing conditions. If we made the same cross at the same time, they might split months apart. There is really no substitute for keeping a close eye on them.
I usually harvest dry seed from split capsules so I don't have much info on green caps. However, there are usually two distinct phases of growth for orchid fruit. The first is purly a hormone response and forms the capsule. This swelling phase is followed by a distinct lag where the cap seems to do nothing. The second phase of growth or secondary swelling usually indicates seed production. Try to let the second phase go as long as you are confortable. Be ready to harvest at the frist sign of yellowing, wrinkling, or splitting.
