What causes a spike to grow back into itself just one leaf up from where it originally started. Is it safe to pull the one end loose so that it will hopefully grow normal and develop blossoms? Hope that makes sense.

I made an attempt to pull one such spike out and it snapped. Let it continue to grow for a little bit and see what it does, it's completely possible the tip of the spike may exit somewhere else.

If it does not I think the best course of action might be to carefully make a small incision in the leaf at the tip of the spike and let the spike continue to grow out of the cut.

I agree, although if you're gonna cut the leaf, remember to use a clean blade and to dust the cut with cinnamon after you make it to prevent infection!:)
