Beginner Cattleya question

I have had two Larger cattleya orchids for 3 years. Why do the leaves all lay horizontal instead of upright like I see everyone elses?

You obviously haven't seen "everyone elses". ;)
In many cases, people tie the pseudobulbs with phone wire or similar to a stake in the center of the pot to make them stand upright. Alot also depends on the growth habit of the plant. In larger plants, the new growths will grow out to find their spot in the sun away from the shade of the older growths.

I agree with Bruce. It depends on the plant. Only a few of my cattleyas have psuedobulbs that stand straight up. Many of them go out to the side. When you repot cattleyas you can try to place them in a way that will encourage the psuedobulbs to grow up.
