Although sphagnum would not be my first choice (holds more water than I care for), you may be able to make it work if you are careful. Don't water until you are seeing very little condensation through the clear plastic. This will require a lot of discipline, the tendency for most people is to overwater.
I would remove a little sphagnum from the top of the pot so that the bases of the pseudobulbs and rhizomes connecting the pseudobulbs are not covered. This will reduce the chance of rotting pseudobulbs.
