Although sphagnum would not be my first choice (holds more water than I care for), you may be able to make it work if you are careful. Don't water until you are seeing very little condensation through the clear plastic. This will require a lot of discipline, the tendency for most people is to overwater.
I would remove a little sphagnum from the top of the pot so that the bases of the pseudobulbs and rhizomes connecting the pseudobulbs are not covered. This will reduce the chance of rotting pseudobulbs.

Turtle? Where?
I looked to the plant and completely missed it.
Going back on topic. Sphagnum moss is something that I'd use only when humidity is really low and everything gets dry fast. If that's not the case, follow OW's advise about being very disciplined with waterings. If you can't do it, no problem... remove the sphagnum and keep the orchid mix you got.

In the picture of the newly potted plants There is a turtle to the upper right.
I agree, I only use spag when I went to keep something really wet.

Ah, saw it... and it seems real. Aren't turtles vegetarians? Do they like orchids?

I think my area is little dry, I only 1 thin layer on top. I'd that still too much?

Rather than thinking about layers, just consider anything covering the rhizome = too much.

The label seen in the first photo shows it is a Beallara. They don't like drying out completely, but they also don't like staying too wet. Sphagnum moss can be a good medium for them if you are careful not to keep it too wet, and let it get nearly dry before watering again.
The orchid mix you used has a lot of small material and stays wet very long. I would take the sphagnum moss off the top. Learn how to use a skewer to check the moisture in the center of the pot:
Using skewers to determine when to water
