For the keiki, you could just put some sphag moss around the roots to retain moisture. Or, you can cut the spike an inch on each side (so the little plant isn't injured, and pot into a small, flat plastic vanda basket with sphag moss. This is what I would do.
Oncidiums are very, very easy to grow in large lava rock. They like to get very wet, then dry completely before being watered again.

I would just pot or mount the keiki....the plants are just fine in the pot for another year. The roots are not trying to crawl out of the pot yet.
Cymbidiums are grasslike long thin leaves....did it not come with tags? are all of your plants NOID?

they are. the only tag i found amongst all these was in a pot thats been outside for a LONG time with a dead phal in it.
i already repotted 3 phals that were out there and cut off a BUNCH of dead roots so i figure these are probably in just as bad a state if not on their way there.
all these are in clear pots (that they came in) and the medium and roots i can see through the pot are very dark and mushy looking, thats why i wanted to repot. but you think they should stay in the pots another year?

you will be inviting root rot if you pot the plants wrong=it will not have enough time to dry out evenly= the outer will be dry while the inside near the roots will still be damp....it must be compact and just right for the roots to breathe....I say your pictured plants in the pot is good for another year

yes, haha. its my boyfriend's mom's that she got for christmas like 2 years ago. hence the red bow shoved in it.
heres some better pix now that ive removed the decor.

right....it looked like a gift bow LOLZ!
do not repot yet....you will know it when the Oncydium roots crawls out of the pot then its time to repot....these have small roots that will sulk if you disturb them too much.
It looks like an Oncidium from its bulb, leaves, spike and flowers(2nd picture of the second batch)....my guess is its a 'sharry baby' if it smells like chocolates then it is....
