I suggest you not repot all 15 in one day. There's no rush and we don't want you getting fed up!

Ditto that... Cyms - especially big overgrown ones - take time and muscle. I can pot 30 Paphs in an hour because it's just "dump them out, add new medium, done" It's easy to spend an hour just wrestling with one big Cym .

Also... don't overpot... if they really need to be in 10 inch (3 gallon) pots, OK... but most of them can do nicely in 8 inch (2 gallon) pots - if they don't fit, divide. They need 2-3 years' growing room, no more. But then, I"m an old lady... 2 gallon pot is about all that I can manage in terms of weight and "persuasion".
