If it works well for you for a really long time (like indefinitely) then definitely stay with it.
I think the sphagnum moss (I used to write it as spaghnum, as I never figured it would start with sph) usually lives in the wild in places where it's humid or lots of rain etc ----- maybe. So when it's being grown in some other place that's real dry, then it'll dry out fast - unless we compensate for that somehow, but wetting it more often, or doing what you do - covering it up.
As long as the cover up doesn't cause drainage issues or anything else that can create issues for orchids (like smothering roots with super wet media), then that should be ok.
