Since yesterday. Drainage is my concern as well. Any excess water should run into the rocks. I've used the same rock idea for cactus for years. But in the jar the "soil" will not dry out completely like I know some orchids need. I checked the humidity in the house and it's at 60% right now but that's because it's raining outside. Normally closer to 50%.
What these want is a wet-dry cycle (they're in the Vanda family) They aren't harmed by drying out completely (Mine do, daily... it was watered this morning, is quite dry now, and I see the beginnings of buds! These little guys can bloom multiple times per year, and each time produce several flowers sequentially on an inflorescence. And are fragrant) So I don't think that your humidity will be an issue.
