Most important for the roots are air, after is water. An orchid survive days, weeks or months (depend of species) without water but goo in Heaven after one day without air at roots. If you tendency is overwater maybe for the beginning is good to use LECA classic method in clay pots or S/H method.

Sphagnum moss is more better, if you don't use sponge rocs or polystyrene expanded in mix with coco husk chips, say goodbye anticipated to you plants.
One more think;
peat moss is not sphagnum moss
