What is wrong with my orchids?

I have several catts that seem to be turning purple. Based on my research, some catts with purple flowers are more prone to leaves turning purple if they have too much light. Is this true? I have them all under a 2 bulb T8 light at the moment (until I get my 4 bulb T5). They seem to be healthy, they are putting out more leaves and roots. I'm not sure if this is something I should be concerned about. I posted three pics below, the color is a little off. One just the underside is turning purple. The other, basically the entire plant is turning purple. What do you all think?

Another issue I'm having is with a NOID mini phal. The leaves are shriveled for one and then it also has some black spots on the leaves. I'm pretty sure I have been underwatering it. It was recently planted in a new bark mix so, I didn't accurately take that into account. Would this phal be better mounted? I feel like I can more comfortably water mounted plants without as much worry about over watering. As for the spots, I'm not sure what is going on. Any ideas?
