Empty spots are okay it gives the roots some space to "breathe". I always end up with some air pockets in my pots and the phals still go crazy with root growth. If it bothers you too much or if you feel the medium is too dense in some areas you can use the flat end of a skewer to push the moss and bark around to reposition it a bit.
