The most likely causes are necrotic zones around areas where insects took bites, and some kind of fungus due to your recent high humidity.
Phals in nature grow hanging sideways so rain drains out of the crown and down the leaves. Consider potting and/or mounting them like this. I think Orlando is too far North to mount on trees outside, but people in the Miami region are able to do this.
Fungicide won't help for long. I suggest figuring out how to improve leaf drainage and air circulation.
The medium for the Dendrobium looks very old. When was it last repotted? This plant might do well mounted on the branch of a deciduous tree outside, if you can ensure it doesn't suffer frost damage.
