congrats mv,
the new cane looks great.
Thanks for the update in confirming fertilizing with the right fertilizer is so important.
The MSU is considered one of the best. The new cane has grown considerably bigger.
There is so much to discover when it comes to fertilizing which is worth doing. Unfortunately there are so many different theories on the subject it makes it hard to figure out.
Most people like to supplement with seaweed extract which I have read gives plants a bit of an increased resistance to stress and cold damage.

I wouldn't worry about the old leaves falling off at this point.

Don't let the plant dry completely- this tends to encourage leaf loss but don't ever over water it in winter. They drink less which is why I like weighing pots I am not sure on. In winter I tend to carry on watering like in summer just watering half the amount than usual - but mostly based on how much the plant has used up by then.
