I did an internet search for native orchids of southern Italy. Several informative sites came up. This one may have what you need to find orchid identifications for your area:
Guide to wildflowers, notably orchids, in the Gargano Peninsula, southern Italy

Not certain if this location is close enough to you to be helpful. If not, I am certain you can find other sites with identification information or books on the subject. A good book in hand while hiking is an invaluable asset. Good luck with the identification of your orchids.

Thanks a lot! Gargano peninsula is also in my region, Apulia, and its enviroment is very similar to the Murgia, the geographic area were I live, so also a lot of plants who grows there are the same who grows here. I halso have a book of the spontaneus species of my area and I have to consult it. I'll let you know
Oh, if you haven't seen it, there is also this orchid

I've been trying to find some here where I live but could only find Serapias.
The place where I spent most of my youth and early adulthood (not the same place now) was packed with ophrys (at least 16 species I could find), anacamptis, serapias, etc.
