I have had trouble getting through the winter without losing too many leaves. The plant seems to stand still for months until it starts growing again.

They're mostly dormant when it's cool and dark but shouldn't ever go dry. They do drop leaves. The more light and warmth you can give the better. As a reference G. jasminoides tolerates full Arizona summer sun and heat all day long if it's moist and well drained. In a northern climate I would overwinter Gardenias in a hothouse if I had one.
