Also, when I bought it back in March it had the remains of one old spike with one bloom on it...Im assuming if conditions are right I could expect a spike around fall?

I'm not sure what the answer is, but mine is in full flower on two spikes just now, with something else that may be another spike.

I only bought mine on Saturday and I'm not yet used to these things, but I think they flower at a certain maturaty level of the growth/p-bulb rather than on a set seasonal patten.

Natrually possibly. Pretty much anything can be forced into bloom and many times some plants just decide to bloom out of there normal season. Here is a link to a recent example of a Cattleya pecivaliana blooming way out of season.

I think Sharry Baby can bloom pretty much at any time of year, winter included. In fact, when I search through OB posts, although it can spike all year round, it seems that a lot of plant bloom late winter.
But usuallu Oncs will bloom as soon as the new bulbs are mature enough, providing that the growing conditions are right. So once you're 2 new growths mature into bulbs, I wouldn't be surprised if you see some spikes shortly after that.
