The medium is the "how", you need to first think about "what" the plant needs. Phalaenopsis and Cattleya, with their fat roots, need something more like "humid air" - you don't want them completely dry, but not constantly wet either. Oncidiums have much smaller roots, they need a more moist environment. (Again, not constantly wet because they need air too but more damp) After you have done this for awhile, you may be able to get to the point where the same watering schedule works for all - with some media staying wetter than others. But it takes some experience. At this point in time, do observe what is happening for each and water accordingly.
