....just had a bowl of fresh passion fruit and Costco ice-cream. Yep - its REAL 100% ice-cream. Google other brands, most are hardly dairy. It was SCRUMPTIOUS !

Our redskin peaches are ripe and we had peach crisp yesterday and made peach bread today. Redskins can well but I also peel and pit them, put them in freezer bags and freeze them until I want to use them. They are also good in smoothies. We just eat quite a few of them, too. If you like hot oatmeal, they improve it. Crepes with a peach topping--cook the peaches with a little sugar over heat until they are soft but not mushy, then top the crepes (I will probably make those for lunch tomorrow.). We aren't very into pies but that is another option. Peaches don't last long once they are ripe so if you can't use them, give them to friends. Yes, we feel like we are in a race to use them before they turn brown and moldy...then it will be apple season.

definitely going to freeze some. A peach smoothie or shake sounds good. Do you blanch the fruit before freezing ?

No, I just peel, pit and pop them in bags and into the freezer. There are tons of ideas and recipes online. Have fun! :)

Fruit smoothies (and you can always freeze them in smaller amounts for use in smoothies throughout the year), cobblers and pastry filling, salsa, peach daiquiris, fruit topping for pancakes or waffles, ....

Try desserts or pastries - a nice tart with peaches makes my mouth water :D Also agua fresca with peaches has always sounded like a good idea to me. Never tried it before, although maybe mixed with iced tea - mmm

My grandmother used to make a desert using white peaches. It was a family favorite and if you have a sweet tooth, it's unbelievably sweet.
In a large bowl she'd start with a layer of vanilla wafers, then a layer of thinly sliced peaches. Alternate the wafers and peaches, ending with a layer of peaches. Pour a can if sweetened condensed milk over all and refrigerate. The longer the refrigeration the more the condensed milk soaks into the peaches and wafers.
She couldn't keep it in the house, everyone was always raiding the fridge.
