Wow!! You sure do you love your carnivores! Do the Pinguicula curl up their leaves like a sundew when a bug gets on them?

Indeed I do. I've done a bit of conservation work for Sarracenia (the S. purpurea I have don't exist in the wild anymore due to herbicide spraying). This isn't even my entire collection.
Pinguicula curl their leaves slightly when they catch something, but it's not as drastic as most Drosera. All of my Pings but 2 are dormant right now, so they look completely different.

Do the Pings require as much sun as the other carnivores? Are there any lower light carnivores or do they all like it pretty bright?

That is a lot of carnivores! I myself have a renewed spark for them, especially Heliamphora, Cephalotus, and Utricularia.

I really love the vft's and the nepenthes. What is the biggest nepenthes you have? (Species, Leafspan, pitcher size, ect.)

Ping light level all depends on where they're from. I grow Mexican Pinguicula. They're found in very open areas, usually at higher elevations, so they can take a lot of light. I grow them under lights in the summer alongside my tropical Drosera. Come winter I let them dry out on the porch once the days start shortening. This triggers dormancy, which should be around 5-10 C and bone dry.
The North American species like partial shade. They usually burn in full sun.
As you can tell, I like them all. Helis are just so expensive! I really want to expand the Utricularia collection. U. calycifida is high on my list.
The size of the Nepenthes will vary with age. Currently my largest vine is N. glabrata (which I had to cut back, since it reached the top of the terrarium), largest leafspan goes to N. boschiana, and the largest pitcher is a tie between N. boschiana and N. truncata.
For potential size, N. glabrata and lavicola will definitely stay the smallest and most compact (which I like). The largest vine will belong to N. burbidgeae if I don't cut it back. The widest leafspan without a doubt will be N. boschiana, at 1 meter wide (it's an insane plant), and the largest pitcher will be a tricky one to decide. If my boschiana is from Mt. Sakumbang the uppers will max out at 40cm in length, but N. truncata will have more volumous pitchers, even though they're only 30cm tall. However, if my N. attenboroughii seeds germinate those will dwarf all of the others with a 1.5 liter volume and 30cm height. I'm very excited for that one! My N. naga will top out with 33cm tall lower pitchers if I'm lucky. So yeah, I like the smaller ones, but for some reason I own some absolute monsters.
