Yeah, I really like the panko plus some corn meal. We use a similar mix to make traditional fish and chips… complete with malt vinegar of course!

I always sprinkle in a bit of Wondra flour. Probably a little less than that recipe… but who measures?

If you're unsure about the pickled tomatoes, some of fancy grocery stores might carry the "Bubbies" brand, those are pretty good as a way to try them before you commit to the process.

I love them sauteed with onions and plopped on top of a pork chop.
