OK, this is a non orchid. But, It is tropical.
I'm looking for first hand info on the fruit of this plant.

Several years back, I planted a number of stem cuttings received from a friend.
They are finally growing very well.
They are beginning to produce some fruit for the second time.
I watched them last year, never working up the courage to give them a try.
This year, I'm wanting to do it.

There are some rave reviews on the eatability of them, and some admonitions about their potential bad side, the oxylic acid content in unripe fruit.

When are the fruit ripe enough to safely eat having the touted flavor?

Good to see that the homestead survived the wrath of Pele. The plants certainly look good.

According to Wikipedia

"It takes longer than a year for fruits to reach maturity.[7] The fruit first shows signs of ripening by the yellowing of its lowest scales. As it ripens, the starch that was stored in the green fruit is converted to sugar, giving it its sweet flavor. This mechanism is comparable to how banana fruits ripen. The strong odor the fruit produces becomes noticeable when it is half-ripe. As time passes and the fruit continues to ripen, the odor becomes stronger. After it becomes fully ripe, however, the scent deteriorates quickly.[11][12]"

The correct name is deliciosa.
Note that this plant, although cultivated in many households and offices, is toxic (not fatal, but it can cause severe skin issues, depending on each person's organism).
The fruit is comestible but if consumed before maturation causes internal damages to the digestive system due to microscopic "needles" from the fruit "skin".

I bought 1 fruit of that in January to try. It's pretty nice to eat .... but a bit fiddly to eat. The fruit gets ripe in stages..... starting from 1 end. The hexagonal shaped elements begin to separate from their neighbour elements. Sort of like tiles separating. Visual cues. The separated loose elements are ready to eat..... while the harder unchanged elements aren't ripe yet .... but will eventually ripen with time. So ..... the fruit can only be eaten in sections at a time.

Eat on segment at a time and do not force them off the fruit. That means they are not ready.

We used to keep them in a fruit bowl (ceramic with holes for air flow) and just eat the pods that had fallen off the fruit rather than the ones on the fruit.
