Anoetochilus are not true terrestrials. Like Ludisia discolor, they're lithophytes on moss covered rocks with a bit of leaf litter covering them that are either found by rivers or streams, or smack in the middle of the running river.
With this in mind, and the fact that they're from tropical countries like Thailand, the humidity is to be around the 70%-80% range.
The temperature range should be around 60 F to the mid to high 80's F.
They grow very few roots that are short along the plant's rhizomes.
My recommendation is to grow them in a small shallow pot and use pumice as the potting media. Put the Anoetochilus on top of the pumice, then use a thin layer of moss on top. Do not cover the plant's rhizomes in moss.
Don't allow them to dry out. The driest the potting media is allowed to be is to feel damp to the touch, then water again.
Grow in shade or bright shade.
