Yay for spikes!!!
I have 3 maybe 4 orchids currently spiking, the only one I'm not sure on is the first picture.

Congrats on all the spikes! If that first photo is a Cattleya as it looks to me, then that would be a new growth. The spikes come from the centre of the leaf or leaves. Sometimes in a sheath and other times not. New growths are good too!
