I live in Los Angeles up in the foothills, we can have freezing nights once or twice a year, hot summers and where I live my R/H meter is mostly in the teens to high twentys on the hot days. I have a mister system and I water alot, I use filtered water, I save up to 500 gallons of rain water for the greenhouse and house plants only. I also installed a hot water faucet outdoors, so that on cold mornings I can water wth warm water instead of freezing cold water, this works great for the greenhouse which is heated,

That's an amazing yard! I love it. Your plants look remarkably well grown. Good job.
